Gardner, a winemaking consultant from Pennsylvania. “The more saliva needed to interact with the liquid, the more acidic it tastes,” she explains.

Titratable acidity is related to pH value but measures different things. Titratable acidity measures the amount of acid while pH measures its strength on a scale of 0-14, where 7 is neutral.

Typically, if a wine has higher levels of acidity, its pH value will be lower as well. High-acidity/low-pH wines are stable because their environment hinders bacterial and other microbial growth.

Another important thing to remember is that the numbers on the scale are logarithmic; not linear so pH 5 isn't twice as acidic as pH 6 - it's actually ten times more acidic!

“I think pH values have more chemical aspects [to them],” says Alison Thomson, owner/vintner at LA Lepiane Wines in Santa Barbara County California. “Acidity has more to do with these acids' flavor characteristics.” Acidity makes white wines taste like lemonade - they make you pucker up and want to drink more! Then I think the pH value reflects how stable your wine will be.”

How does this affect your wine?

Acidity affects both appearance and taste in glass cups: The lower the PH level means higher levels of tartness for red wines; resulting in brighter red hues since they turn redder due to low PH levels whereas high-pH reds appear blue or purple due mainly for oxidation reasons which might cause unpleasant colors especially when young white wines come into play.
