Cardinia winery employs a pumping over technique during the fermentation process, where grape juice is extracted from the bottom of the fermentation tank and pumped to the top to break up any cap that has formed. This allows for better extraction of color, flavor and tannins from the skins. Before pumping over, the grape juice is cooled to lower both tank temperature and heat generated by yeast during fermentation.

The vineyard now produces Riesling, Sauvignon Blanc, Semillon-Sauvignon Blanc blend and Pinot Noir wines. These wines have won numerous awards in international wine competitions such as Germany's Mundus Vini Great International Wine Awards in 2015 with two gold medals, Australia's National Wine Shows in 2014 with five gold medals. The winery itself was named "Family Business of the Year" twice - once in 2009 and again in 2010.
